Making unique, authentic wines requires a great deal of rigour in the winery. We use our own grapes to make the pied de cuve (fermentation starter), we work with gravity, no sulphites are used during vinification, the grapes are left to macerate for several weeks, with the cap sometimes punched down, depending on the specific features of the vintage, and we work on the lees throughout the ageing process: this gives the wines a sense of place, and more pronounced aromatic intensity and salinity.
Our motivation has always been to create several distinct wine profiles. We want to express our terroir’s different facets while respecting the energy and diversity of our environment here in the Haut Languedoc, and the specificity of our soils. In our creative work we focus on balance on the palate and the personality of the wine in terms of its aromatic and mineral expression.
